Almost all major mmo's do server maintenance weekly.. and yes server can become unstable and shut done if you do not do the maintenance... even more stable mmos then ESO do it. Maybe you should educate yourself about why and the effects of not doing it before running you mouth off...

As you can see, ESO is a relatively newer MMO, and as with countless others it will take a few years before it becomes a well oiled machine. The players that love the game will stick around. Those that like to hop around to whichever MMO is the current flavor of the month for them will do so. For every customer that likes to complain about maintenance there are many more that understand the need for it and are quite content doing other things while a server is offline.
You could play Elder Scrolls Legends, Overwatch, or even a basic game of solitaire while you wait. When you limit your options to a single game, things like this will always come up, and in truth, you are the only one to blame.
EDIT: P.S. The PTS server is still online. You could always run it, maybe try out a new build, test it out before committing your gold and time on the live server into something that may or may not work. There are always options, if you are willing to look.

I disagree. Complaining can help because knowing problems allows us to invent improvements. Investigate Microservices because that's what allows companies like Netflix to deliver entertainment without downtimes like what we are currently experiencing.

There is complaining, which can get good results, and then there are witch hunts, put downs, insults, 'I quit' rants, etc. The latter is far more common here and is unnecessary to get results. Let's be honest, what this always comes down to is money. Is more money saved by NOT adopting a highly available - but more expensive - game architecture, or does this lack of availability cause a loss of consumers that costs the bottom line even more? ZOS no doubt do understand the answer to this question after 2 or 3 years of running the game, the fact they persist with a rather flaky solution that suffers a lot of outages and is supported by a team that certainly has all the outward appearances of not being particularly skilled, says to me that they do no associate much revenue loss with this model.
Why is that? Well, there's a market cap in terms of how many people will sub to a game anyway these days, because for most casuals they can't be bothered to sub. Once the game is bought the money is safe in the ZOS bank anyway. And those people - like me - who do sub to ESO, are a captive audience. There are many MMOs out there, but there is only one Elder Scrolls MMO, so ZOS have a monopoly at that level.
Therefore, why invest in anything better, we're putting up with what they give us today?

Wrong, and wrong again.
That technology has been here for a while, and Zenimax might have used it among the first for MMO that is, but definitely they aren't the only one who's been using it.
I could list a couple of games and their downtimes, but I'm just gonna mention Guild Wars 2, as it is the most similar game to ESO. They are both MMOs, and the both operate on a 'Megaserver'. Difference is GW2 launched using standard servers or shards, and then transitioned to megaserver in april 2014, and yeah, they virtually have no downtime. Last downtime was on August 23rd, and before that in february. Downtimes are so rare you can expect some cash shop goodies in your mail.
I only hope ESO will improve in that regard and these day-long maintenances will be thing of the past.

Hmm? Well there are new and better ways of doing maintenances and applying patches you know. Eve's maintenances take 15 minutes. Black desert's is ~hour on crappy russian servers. GW2... i'm not sure they have the maintenance downtime at all. The list goes on. 4+ hours of maintenance every monday? Doing this during the day? Not compensating for additional downtime? No, i don't think i've ever seen something like that except for ESO.
