Personally I'd go with Bosmer, since there isn't a huge difference in terms of sustain or raw damage, and Bosmer gets two other pretty useful racials.

I play a character called "Gives Me Wood Elf" because I am a mature and sensible person.

Bosmer get 21% more stam regen, 6% max stam, take less damage from poison and disease (read:glyphs, poison inject, incap, veli mainly) which also doesn't allow them to get the diseased status effect (which lowers your healing taken), have a smaller detect radius AND are BiS for cuteness and cannibalizing your kills.

What more can you even want?

Depends if you are playing stealthy or more in your face.

If you wear heavy armor I'd go redgaurd, If you wear medium wood elf.

Choosing between wood elf and redguard?
Wood elf definitely, you'll never look back after choosing those little pesky cannibals.

But any race is equally viable in PvP I think. My NB is a Dunmer and the extra stam and mag pool really helps with that slightly more damage and also to prolong my time in Cloak for escapes and/or offensive manoeuvres.

Redguard for the looks, Khajiit for the swag or Wood Elf for best theoretical performance.

I’d say the other way around.

Wood Elf gets Stam Rec but as this is additive with Medium passives - not multiplicative - you actually get less marginal benefit from the passives the higher your other sources of +recovery are.

Heavy doesn’t get any stealth reduction like Medium so the Wood Elf passive benefits that more.

Then because Max Stam is lower on a Wood Elf compared to Redguard and in Medium, you probably need to sacrifice Stam for Health (whereas in Heavy, you don’t), the higher Stam of Redguard will help you offset this trade-off

Any race will work well if you know what you're doing. Sure you can pick a certain race with BiS gear if you're trying to max/min and squeeze out 1 or 2 more % points. But after a point, with +400cp, game play experience and situational awareness, anyone can do well with a stamina NB of any race.
I currently play a Stamblade Khajiit in heavy armor swinging a 2 handed sword and do pretty well in PvP with my guild.

To those people who get excited about Dunmer Fire Resist or Bosmer Poison Resist.... Don't. This isn't Skyrim, Oblivion, or Morrowind. Argonians are not virtually immune to disease in this game. Redguards can't laugh off Poison. Dunmer don't dance in lava (well, I guess they do a little bit because of the free passive). The point is the actual amount of resist these classes get is really weak. If you want to be tougher based on these resists I suggest you are barking up the wrong tree. There are better races in the game for that. To Clarify: Bosmer is more about that 21% stamina regeneration and the 6% stam bonus.

You misunderstand: if you are a dunmer you cannot get the burning status. If you're a redguard, someone hitting you with a disease enchant can give you major defile for four seconds, or likely 3/5 vigor ticks. Bosmer and argonians don't have to deal with that.

Nord... just to be different! LOL

Otherwise, Bosmer or Khajiit I'd say. Mine is Khajiit and I enjoy it.
