I wish we had all the furnishings in game that NPCs had (because I have seen more than a few furnishings in NPC homes that we do not have the ability to create).

Your travelling assistant grants you access to the guild bank, but it works like a attunable crafting station so you lose access to your normal bank if you attune it to your guild bank. The attunement is shared across all of your assistants should you have more than one.
I wish we could send companions on time-based missions and get companion gear and raport as rewards.

Dragon mounts are granted, but they work exactly like they did in Skyrim - basically just a rollercoaster ride you have no control over.
I wish we could set the weather in player homes to any weather we like at any time.

Granted. You get to buy one additional character slot than the current cap. I guess if you want to play the new 7th class on all specs you have to buy additional armory slots for that character...

Granted. Fishing is now an emote only. The fish item is now obtained like many other provisoner material through barrels etc, and perfect roe has an itsy tiny chance to get looted from those barrels and lootable fishes.

However you will be asked regularly if you come to the cloud district very often, if you have heard of the high elves, how long Stuga has been looking for you, what you are going to do about the dragons in your own homeland, to cry me a river to float out of Craglorn (or whatever zone you are in), to cart the goods up a road that's swarming with sand warriors and wild creatures to a school where they lob of the heads of the unworthy, while someone sings the Starlight Bride of Alinor.
These voice lines are all on a rotation according to the daily routines of the respective NPCs as they go about their day in these living, breathing cities.
I wish for Elf Bane to be turned into a light armor set.
