Did they update the quest info for this or was that done earlier? Got small quest circles on the map showing me exactly where to go and it now clearly says that beating the timer only gives a better reward (and thus not needed to actually finish the quest).

You don't get penalized for taking your time, you get a bonus for being efficient. Like Merlin said: practice makes perfect, and using the right gear helps a lot. If you invest the time and effort you get slightly better reward, up to you to decide if that better loot is worth the investment.
In this case, a bonus for succeeding at an objective is functionally the same as a penalty for not succeeding at an objective.
See, the problem is that the very presence of a timer makes it stressful for me. I HATE being timed, because I'm bad at acting under pressure. I get overwhelmed very easily by that sort of pressure. It doesn't matter that it's optional. I still feel that stress.
It's also a matter of principle. To me, who grew up playing the old Thief games in the middle of the night, stealth gameplay has always been about patience. In a good stealth game, you can take your time to scope things out, and wait for the perfect moment when the guards are all in the perfect position and use the perfect tool for the job. My favorite thing to do in any stealth game was and still is "ghosting," where you get in, complete your objective, and get out again without ever being detected. That's always been the challenge of stealth play, for me. Adding a timer to it was never, ever the point, and I find it just distracts from the core of stealth play. The fact that it's an optional objective is missing the point.
Basically, the presence of a timer on Heists and Sacraments sucks all the fun out of it for me. I love stealth play, but those two things just hit the wrong notes for me to take any fun out of those two dailies. So I maintain my "yuck, yuck, yuck."

Which is fine, if you don't mind paying or sleeping off bounties. Hard to get everybody without being seen, especially within the time limit.
If you can sleep off the bounty, than just run through it and kill everything.

This, BTW, is the start of a long event marathon. When the TB/DB event ends, there will be a 3-day reprieve before the Jester's event starts. And following hot on the heels of that event is the Anniversary event which this year is longer than ever... I think it's something like 4 or 5 weeks this time around?
For two months, the ESO calendar is just a solid block of events. If you don't get burned out by that, then kudos to you. But I suspect that will not be the case for many people.

While I thought it would be the case from PTS , I'm still a bit irked that getting two tickets a day requires both a heist and a sacrament, as doing these properly can be time consuming. (I realize they can be done more quickly and sloppily for tickets if need be).

A lot of folks couldn't care less about the Indrik mounts, but starting later in the month you will be able to buy Outfit Style Pages and pets with event tickets, so there won't be any surplus if you want to get everything, and possibly a shortage, in which you will have to decide what you want to buy with the available tickets, and what to pass up.
The pressure to acquire tickets will increase (and thus why you will have to start buying them in the crown store if you want to get everything offered.)

Tastes differ, I respect that. But I feel that avoiding detection is too easy in these missions to make it just about that without any further pressure.

That isn't true. You needed to complete a few quests in CWC before the dailies were unlocked (and if you were following the story, a somewhat long quest to get to CWC in the first place. You needed to complete one quest in MW before the dailies were unlocked too.
Even though I've had ESO+ for a few months when the CWC celebration came around, I hadn't started it yet. I got all the tickets offered at that time despite the fact that I was unlocking them as I went through the story while the celebration was going on.
The problem, IMO, is that both DB and TG require other dailies to the player to advance the story. That might cause a little problem, although tbh, unlocking the dailies doesn't take long.

Save it for the "last" thing you do (whether running efficiently or or whatever) - be even a little aware of your escape route (fastest way to the door is usually best) - and you won't have any problem beating the timer.

Thought it was just me losing my memory when I saw that. I noticed it more so when Clockwork City didn't get the same price as those 2 had last year.
Something has changed within Zos over the last few months or so, the usefulness of the dailies has dropped, forget about getting anything good, the discounts are laughable and they are raising the cost of items as if players won't notice.
