This bug does not happen w/ the gear slots, just the weapons.
A few things to note;
The t5 of High Elf daggers is available, i forgot to check the other racial options.
There needs to be some way to sheath your weapon. After dyeing it, it remains unsheathed, even when I go back to working on the rest of the outfit, which made it much more difficult to see properly.

I went on the PTS to try the new system out for myself but noticed something very bad. Based on how ridiculous it seems I believe it to be a bug.
Using the dye all option increases the cost in gold to be much higher than it would be to normally dye each of the same slots manually.
In this first image you can see it only costs 1,350 Gold to apply, mind that I also have dual wield weapons.
However in the second image via using the dye all option the price is increased to 4,500 Gold for seemingly no reason.
I will be using /bug to report this as well. This certainly does not seem intentional and if it is then I can tell you right now it is a very poor choice.
