Probably quick change to a different set altogether when solo. Never gonna do that much dmg with too many points in health though.

Health tank? Assuming you're not a templar or you would just slot Sun Shield

There is Thews of the Harbinger from the Imperial City. It deals damage to enemies striking you(while you block) based off 4% of your current hp.

(although you could literally use anything I suppose, just use a normal light or medium damage set while soloing? :p)

Best thing i can think of is black rose + engine guardian + leech set ( imperial city prison loot )

I would add reduce cost glyph to help on sustain and you should be fine .

    Grothdarr - pure dmage
Leeching Plate - damage and heals
Storm Knights Plate - pure damage, has conditional proccing, so not 100% uptime in all fights

Health tanks that aren't Templars tend to be difficult since most skills based off health are defensive in nature and not offensive.

Julianos or Hundings would be the most general sets that come to mind as they're just pure damage booster sets. If you aren't willing to forgo the tank approach entirely maybe something like Dreugh King Slayer or Rattlecage would work. Not as much damage as Julianos or Hunding but it's a tanky DPS approach so it should work well enough, if you have the patience to farm them that is. Then, of course, there's also proc sets (I feel dirty for suggesting this). There are plenty of sets that offer plenty of damage for very little effort. Viper's Sting, Grothdarr, Red Mountain, etc. gives you a fairly large pool of sets to use.
