I just got to lvl 50 for the first time and I really don't know what to do with my templar. I really don't know what I'm doing. I don't have a build and I don't know how to craft, and I don't know if I should give up on my templar and make a new character.

Do you like healing or doing damage, or perhaps both? In a good group and when you've figured your build out, you can definitely let the healing take a backseat to doing damage. But healing and support are viable and important too!
Second the suggestion to join a guild if you're gonna get into PVE or PVP. Getting firsthand advice from people on what does or doesn't work is pretty darned useful.
So I'll ask it again: what do you enjoy doing in the game? Or what do you not enjoy doing? You shouldn't do something you don't enjoy just because a guide tells you it's the One True Way (hint: it's not). Hell, if picking flowers all day is something you really enjoy, then your templar can pick flowers all day.
