That was really brutal and I really hope to have that in ESO. Blood flowing from victim's necks, splattering all over the ground and screen, close to perfect clipping between the weapon and the body, realistic screams...
Agreed. It would be nice if they had more choices... even in the level of blood and gore one wants to see. One of the reasons I like the "Brutality Pack" concept from @Gidorick so much - those who want more gore and grittyness can pay for it, the rest can enjoy the current level. And maybe for the squeamish ones who prefer to do their NPC murdering without being reminded that death by stabbing is a brutal thing, a "carebear" setting that disables the cutscenes and blood effects for vampires & werewolves...I'm loving the gore-fest with my murders! The game is rated M, and I'd like to see more 'M' content, not the sterilized squeaky-clean we have now.. I grew up a long time ago and can decide for myself how much gore, swearing, sex is in my games.
That said, some people ARE squeamish or way too delicate in disposition, so an option for 'Mature' on or off would cater for all. Choice is never a bad thing. We are adults here, capable of making our own judgements on stuff. Please let us make our own choices...
If your not comfortable in joining a guild that is basically a murder cult for hire... well I think you should be asking for another game because that's the elderscrolls series has always been about...

While I've had no issue in the past with sneaking and stealing (which is quite fun) I find the graphics for the DB assassinations to be very confronting. As I say, I'll probably be in the minority with this opinion, but it is getting to the stage for me that I probably won't continue with the DB guild line because of this. I just wish there was an option to not have these cutaways show.

I don't get it.
You're playing a game where you predominately level by killing, you now have a crisis of conscience when you see the act of stabbing someone in the back!
Obviously, I'm quite glad you find the idea of stabbing people in the back disturbing, however I'm slightly concerned that you find beating them to death with weapons or fire quite satisfying currently! You also don't have any issue stealing!
So we can surmise from this, that you don't object on Moral grounds, just graphical!

Animations that are disturbing are disturbing for a reason. You can run around and kill stuff in the game and never really give it a thought but animations can be designed to trigger impact and leave you FEELING badly or awesome. I don't think anyone really wants to play a game that leaves them feeling badly. This was why a lot of ME3 fans were rather upset at the ending of the series and why a fair portion of people found fallout 4 unpleasant.
There should be a way to shut it off. People generally don't play games to feel bad. If the animation is disturbing for some or leaves them feeling badly then they do have a point. Who wants to do something that makes you feel badly or triggers bad feelings? Only people who are not very bright or perhaps some that love that kind of drama.
