I have never really understood the dislike for pets from the ESO community. In 17 years of playing WoW I never saw this complaint and there are a lot more pets in that game in cities (and usually a higher population of people in any given city).
Perhaps its the camera zoom. I think folks in wow zoom out more, where as some people here play zoomed in.

You can't target through the pet as it is becomes the target. I play a pet sorc and understand the frustration as my own pets get in the way sometimes. It is why I'd like to see more space between pet and player and have the ability to place the pet.
ZOS wants you to see all the cool pets, mounts, companion setups, etc, so you will grind or pay for them too. There's no way they would allow them to be hidden that much.
