Realistically, what mounts do you want most that will probably never happen?

I badly want a gryphon for my AD High elf character. It doesn't have to fly (explanation why could be when they're mounted the rider is too heavy preventing them from flying)

At the end of the orsinium relic hunter/hero of wrothgar you are given a quest to go and collect the skull of King Kurogs Mount 'Coldwind' which is a bear. It would be cool to be able to get this mount.

Cheetah mount, and not another reskin of senche body with different color. Needs to have tall legs, slim body etc They better never make it so I wouldn't have to think about purchasing it.

However, the model I've waited to see for a long time has been a long fanged senche with full tail, not the sabre cat design they did before where you could not remove the armour... having seen the image for the new shadowscaler crate mount, THIS is the sort of model i've been wanting... However, I don't like the red cloth on it.

From the pictures it looks like the intention is the horse is blue for daggerfall, the wolf an amber for AD, and the panther for Ebonheart reds... BAD idea. I play solely AD and I'd love that model, but just not all the red... use that model as a future panther like senche and i'd buy that.

Unfortunately, as its a crown crate mount, I won't be getting it anyways

I think that making some of the creatures we come across in Tamriel as mounts would be pretty cool, fairly easy to implement bc they at least have something to work off of already, and canon-friendly (I guess?) Things like a Dreugh, Storm Atronach, Clannfear (has there been a Daedric mount yet?), Bull Netch, etc.

And like many others, I'd love some type of flying mount. I don't need WoW flying mechanics (which would probably be impossible anyway), just the illusion of flying like hovering off of the ground no higher than the height limit of other mounts.
