I think we need to take the emotions out of this tbh.
People who are upset about the critters dying are not overly emotional, they just dont like seeing visualizations of death and are sensitive to artistic non-real enactments of suffering. They dont like seeing things that are "optional" enemies in their eyes needlessly be killed. That is fine.
The people who are killing the critters are not emotionally stunted and don't enjoy punching puppies in the real world. Im pretty sure that if anyone saw someone setting fire and clubbing defenseless wild animals in the real world, most of us would stop them and would be upset. However, in the game they recognize the critters on the screen are not real and cannot suffer, thus are not given the emotional grief that is given to real creatures in the real world. That is fine.
It is just a difference in perceiving an art form (and yes video games and its graphics is an art form). Neither perspectives is wrong, or is inherently BETTER then the other. Thus, you cannot use one perspective to force changes in the game, because you diminish the perspective of the other which is no greater.
Instead, we should be be deciding things based on the game itself.
1) killing 1000 creatures is tedious to do
2) Limiting it to a couple zones creates needless competition between players.
3) They need better quests. A lot of people do not have a lot of time to do things in game. So if killing 1000 mobs is going to be what the seasonal endeavors are going to look for the next couple of times, then I will probably not be participating as I would rather spend time questing or doing something much more interesting then standing in the same zone waiting for mobs to respawn for the 100th time.

It's not the first time multiple items have been bugged in crates on launch. For example, the Hidden Kindred crates and several others since then have launched with bugs. Although it should be caught by QA, I wish we could at least PTS test these.
It's also strange that they appear "rushed" as you say, because these assets have been made for a while. If you know where to look, the art was already available months ago, and since most of the splash art is paintover / filters over a 3D scene, that means the assets were already made. So it's unfortunate that these things were not fixed before launch over those months – and that things like Khajiit hair, while not technically a bug, could not have been improved in that timeframe.

Warrior Wave Platform, Yathian Turquoise – is it missing the texture, or upside-down in preview? Edit: It's definitely missing the color (diffuse) channel.
And why do the the Windjammer Braids have a bald spot in front for Khajiit?
At least, depending on one's hair and skin color, it's not as bad as the wiiiiiiiiide purple hair last time or the curly tresses bug, but it seems like these things are not tested for Khajiit before going live? *The braids look like they have a Khajiit-specific design, it's just a weird choice.

It’s concerning, at the very least, that there’s so many bugged cosmetic items in one season of crates. Then there’s the upcoming monster hunter personality that can’t use your equipped weapon and clips through some armor pieces… And the battle pass is supposedly going to have mostly cosmetics. Everything seems hastily thrown together and I wonder if we can expect to see more “rushed” cosmetics in the future.

Please, transplant some fur from mohawk and back to better places.
And I very-very hope mohawk and those silly pointed ears will be not so ridiculous in correct pose.
However, it really look better than first version. There is a lot of things that can be improved, but at least It doesn't look sick and mangy now. Not yet something I will want to play, but now it is not a thing I would strongly avoid.

If they would stop doing these tests (as the very vocal anti-Vengeance players demand it), what should ZOS be doing instead? If the answer is nothing, then you've pretty much doomed Cyrodiil for everyone.
Just stop taking away normal Cyrodiil, it’s not a hard concept. They have to though cause participation in Vengeance is abysmal when they run side by side.

I suspect it won't be used all that much even by those that asked for it. And I don't think it will be used for questing, but rather just toggled on for world bosses, etc..

A lot more than that will try Vengeance and actually like it, or at least find it "good enough" for waiting in queue. There are a significant number of players who log into GH because it's the only game in town, not because they love ball groups, proc sets, and one shots.
