I find it admirable that you are able to defeat these Dragons and that you enjoy the fights. But to clear things up, I am not asking that they change the mechanics of the fights in any way. I just want a bigger space to fight them in.

Because we are not you? If we were you then you would not be you and thus you couldn't do anything because you are not us and if you were us then you would not be you and thus you couldn't do it.

This falls into "is this really something to prioritize?" category for me. As I already guessed, the next complaint would be about getting leads again you already deleted.
I don't find it that hard to ignore leads I'm not interested in, even if the list is long.

You're not supposed to 'outmaneuver' the sunspire dragons or their attacks either (unless you want to kill your group members I guess), you are in fact supposed to stand still between the neck and wing (unless you're able to range tank them as a tank), actually kinda like IA.

Speaking for myself, I'm very unhappy with Infinite Archive dropping random overland gear I already have. With so many IA gear sets, and every one of those sets coming in all 3 weights, why the heck is random overland gear diluting the IA gear drops?
Every time I get a drop in IA that is trash overland gear I lose a little bit more respect for ZOS and their marketing.
These are the design elements that led me to stop giving $ to ZOS after U35. Forced grinding for hundreds of hours is not my thing. Especially since, with exception of the puzzle rooms, nothing in IA is new content.
If ZOS can't respect my time investment, then they don't get my financial support.

And in Sunspire we are there with 11 other players. Not on our own in a very small area that leaves very little room for the player to maneuver.
Since you used the fire dragon as your example in the OP..
During flight phase, you have the same amount of room to stand in at the edge of the arena in both Sunspire and IA. In sunpsire, the arena has the added molten lava pools tossed into the mix, IA you do not. In SS you have Atros to fight in the arena while the dragon is on the ground, in IA you do not.
Character combat placement in both SS and IA are exactly the same mechanic. If you're familiar with SS, follow the exact same mechanic in IA.

Guar Discrimination Needs To Stop
As title says; enough with the Guar discrimination. What do I mean by this?…
Flame Atronach crates are back, and instead of a badass Cold-Flame Atronach Guar, we have two Radiant Apex mounts that seat the exact same… why?
The Flame Atronach Guar is the best looking Guar in the game IMO, the easiest bag ever, just reskin it blue to match the new skill styles… is it such an ask for a SECOND Radiant Apex Guar?
While I get some people like their wolves and senches… there have been hundreds of them.
We have had ONE Radiant Apex Guar and it is the silliest looking thing ever. We need more cool guars, stop making us a meme!

Overland gear drops in IA are curated drops. I'd sooner just farm the last few pieces of an overland set in IA with a couple quick Arc 2 Cycle 4 Boss runs. Each run being 30ish minutes.

I'm with the OP. I'd rather not grind IA if 90+% of the gear that drops isn't IA specific.
Thinking that overland set drops somehow replace IA set drops is just plain wrong, the whole IA set acquisition is balanced around max two pieces per arc. The funny thing is I kinda agree with the OP, farming IA sets is a bit on the grindy side, but the overland set drops aren't part of the problem.
