I suspect that what most people who ask for this really want is to keep all the good things we have now, but with original difficulty and skills. Honestly I'd rather just see them improve what we have now than spend money going backwards.

No, not even close.
There is nothing connecting vengeance and PvE ESO. Vengeance is unique and nothing like it has ever existed in ESO. That's why vengeance should be scrapped and ZOS should focus on fixing the game they created like they said they were doing every time the subject came up...until this year.
I'd love to see a v1.6 for Cyrodiil option for sure. Then the newbies could see how great ESO really could be.

So you don't want the original release version of ESO, which didn't have those things. Are you specifically asking for Update 4, which added Upper Craglorn and raised the max level to VR14?
I started playing not long after that and I wouldn't want to go back to it. I'd miss the new classes, zones, dungeons, trials etc. and features like the sticker book and transmutation, or even the ability to group with people from other alliances in PvE or stay with your group if you go into an area where one of you has done the quest and another hasn't. Even seemingly little things like having to go to the stable to swap mounts and your pets and costumes taking up inventory space would bother me (although there weren't many choices for either).
BTW there is no Guild Wars classic. Maybe you're thinking of Guild Wars 1, but (as the numbering implies) that's a separate game which stayed online after it's sequel was released and has recently been getting updates that make it even more different to how it was at launch.
ESO "classic" was so unpopular that it almost died.
I started back in late beta, I'm glad I experienced it but the veteran zones was so empty even if so many people, probably the first wave trough the VR was not doing quests? WoW Classic is the last vanilla patch
OSRS is a later patch, not launch old school runescape
League Classic is going to be like Season 3-Season 5
most of these classic games, aren't the absolute base version of the game.

What about consoles? We had both VR and CP and even Imperial City on day one here, so would that be Classic?
I'm really surprised how many times this comes up given how much the game's improved since the start. There must be a lot of rose tinted glasses out there.
It was complicated, difficult, and almost impossible to source set items without a degree in google because there wasn't standardised locations back then. There was no housing, style parlour, outfits or even costume dying, and a limited number of low quality mofits to choose from. Console didn't even have text chat, just a very toxic voice system. And as @Ardiel said, no stickerbook, transmutes or JC. No battlegrounds, dueling, or solo arenas. No way to even play with friends if they happened to pick a different alliance.
