Ganking is like 90% sitting around waiting for opportunities, 5% fighting, 5% running for your life. It can be fun but it can also get very boring. I enjoy it more in IC than in Cyrodiil.
It's easy enough to avoid gankers to where it doesn't really upset me too much if I get killed by one on occasion.

PvP is supposed to be about taking on a tougher challenge in the form of another, unpredictable, player as compared with the lack of challenge against a predictable mob with limited AI. For that to mean anything it has to be an equal fight, a level playing field. Whether it's a group of players taking on a single player, or a high level player taking on a low level player, ganking is the very opposite of that.

EDIT: I am of course talking about the commonly accepted meaning of "ganking", I'm not concerned with the legitimate use of stealth skills etc to surprise an equal opponent.
