she's a Vamp with all passives and Mages, fighters, DW, S&B, Resto and Destruction passives and skills I require.
max level crafting Blacksmith, clothing, woodworking, Alchemy, cooking and nearly max Enchanting.
I think you just need to concentrate on what you want to use.
TBH I don't even think about her skill points, however my tank I need to go pick up the skyshards from the other two factions and PVP, although I've got 5 free points on him. So I think at the end of the day if you think about what you actually need then it's not a huge issue.

I'm a very casual player and just want tp be able to do everything with one character rather than make 5 accounts to get the best flexibility in each,
Ie, I want to focus or stam and magic and be able to craft the sets for the same. And also put points into vampirism and PVP :c, I don't mind the time it takes but I cannot put the work times 8 for each characters

At the end of the day I think it's safe to say post lvl 50, skill points are hard to obtain. Then we have the grind to CP561,
I'm a magic sorc , also I'm a vampire and I am trying to save up points to unlock woodworking and blacksmithing to 10 in crafting, I'm chucking provisioning altogether since it's a pain to get points. Now what makes it more dissapointing is apparently we have to pay like 10k to keep switching between what skills you want everytime?
. It took me a while to just get to CP 240 on my main. I really am intrigued by the viper set and bows but I've heard people say there are not enough skill points for every thing.
Granted I do realise there is a way to re-skill what you want in each areas main city, but at the cost of losing something else?

Each class has three skill trees with 20 points each, so sixty points for all your class skills.
There are three armor trees with 13 points each, so now we are up to 99 points.
There are six weapon trees with 20 points each, so now we are at 219.
Each race's skill trees take 9 points. (the xp bonus passive is free) so now we have 228 points.
There are three possible world skill trees (you must choose between vamp and ww) Legerdemain has 20 points, soul magic has 10, and vamp/ww have 16 points bringing our total to 274.
Fighters and Mages guilds each have 19 points and the Undaunted line has 14. Bringing our total to 307
Next, there are two PvP lines with 12 points each bringing the total to 331.
Finally we have crafting. The 3 equipment crafts have 25 points each, Enchanting has 22, Provisioning has 24, and Alchemy has 19.
There are a grand total of 471 skills to spend points on, give or take. According to the skill page on UESP, there are 324 skill points available.
