So I'm currently running Skirmisher Eternal Hunt, stats are pretty nice unbuffed as follows:
Health: 22k
Stam: 35k
Stam Regen: 2.2k
Weapon damage: 2.7k (3.8k with rally + dodgeroll, kinda hard to keep up roll though?)
Crit resist: 2.2k
I think I'm wasting the 5pc on eternal hunt because my rune hardly ever seems to hit. Probably once every 7 people I kill or something. Maybe I'm not noticing I dunno, it seems to be so effective against me on magicka builds though. What would you guys suggest?

Probably wouldn't be that great because medium armour is pretty essential for roll dodging efficiently. If this set comes in jewellery then maybe.... but if you are required to wear 5 piece heavy then likely not.... would be very espensive to roll dodge multiple times.

I am about to enlighten you my friend and change your eso gaming experience forever(I notice some above have highlighted this build whilst I composed this message but I will go into more detail)
I run 5 skirmisher 5 eternal hunt 1 molag kena from time to time on my Stam Blade using 2h and bow.... and I can tell you this build is only really effective with 7 piece well fitted and 94 points or more in the tumbling treeWith 2.2k crit resist I can tell you don't have any well fitted.
You could run this build with food... but I feel it kind of defeats the point, so I run drinks with this build.... it's the only build left that I use that I will still run with drinks.
With vampirism and redguard passives my stats are as follows.
20k health
27k stamina
9k magika (roughly)
3.3k wpm dmg buffed with rally and skirmisher... 3.6k after weapon dmg glyph procs.
3k stamina regen with relentless focus 2.8k with shadow image.
I can dodge roll 14 times in a row.
Obviously I don't dodge roll 14 times in a row during fights as would be poor resource management but my philosophy with this build regarding the impen has always been "why would you need impen if the opponent can't land a hit". You are very squishy when caught out.... but with shuffle active.... line of sighting and efficient kiting round objects this build is the funnest openworld 1 vs x build I have ever played..... just lacks the damage that my food builds tend to have.
Skirmisher is VERY cheap to find in well fitted... I run 3 piece jewellery...2 pieces of well fitted skirmisher armour. 4 pieces of eternal hunt crafted well fitted armour.... 1 eternal hunt bow defending and 2h maul sharpened...1 molag kena shoulder well fitted.
All the dodge roll percentages stack.... get I think 4% per piece of medium armour? Another 5% per piece from the well fitted... and another 18.5% I think it was from 94 points in tumbling.
Do the math on that for dodge roll reduction
Also.... because you are wearing 7 piece well fitted.... running from object to object to kite enemies costs like no stamina as well fitted obviously reduces the cost in sprint
Have 10% reduce cost of stam abilities in warlord think is like 42 or something.... 94 points in tumbling.... remainder of points into moon calf... think I get like 12.5% from that with the points I have left.
Get back to me on this once you have made above changes and tell me about how I changed your life
Damage will be somewhat lower than you are used to with food.... but it's not the point of this build. Your resources will seem never ending... so it's your job to sustain longer than your opponents wearing them down... making them chase you to decrease their own stamina... and quickly bursting in, taking full advantage of animation cancels to try get them out the game as quickly as possible.
I tend to cancel my surprise attack with a heavy attack as I roll through an enemy which places the hunt ward on top of them adding extra damage into my burst.

I can see how it would be hella annoying. But Im also gonna guess you have no hope to kill the more tanky builds, like Temps and Sap NBs?
