One question: If I make a dedicated crafter, do I need to level him up at all? Or can a level 1 craft everything, provided they have the crafting skill?

This.Once you get them upgraded it's not so bad.
It took me a while to learn that I shouldn't hoard so much.
Sell your stuff. Join a trading guild, list the items that you have no use for. For really low-value items, you can just sell them to the in-game vendor.

Instinct tells me that since I can deconstruct items for crafting materials, that I should always always always do that. I guess I shouldn't really worry about doing that then?
Correct. As soon as there are fewer than 10 people in the guild, the bank becomes "remove only." Not sure that would work with ESO. I think once membership fell under 10 the guild bank would not be accessible.
While all of this is great advice I think there is still an underlying problem with inventory. I hate.... HATE the concept of Mules. I think that's an exploit of game mechanics. Other people might be ok with creating mules, but I am not... Even though I've inadvertently used them (created a character to craft one thing or another and just ended up not really using them). I think the Inventory system itself needs addressing. I've gone over my concepts in the More Bags and Encumbrance concept thread.
I know ZOS is coming out with Crafting Bags and I really just hope these "bags" are actual bags that can be moved around the inventory, opened closed, deposited in the bank, etc. (concept here: An idea for how "Crafting Bags" could be implemented for ESO+ members)
