The existence of Easter in pop culture is due to the existence of the religion it comes, there no such thing as Jesus in Tamriel.
On the other hand Tamriel does have a history and precedent of dressing up like animals, but in a “chop the head of the real animal and wear it’s skull like a fez” kind of way. We have, for example Owl masks and Cat masks and Alligator helms. So you’d have to find a corresponding “god of rabbits day” and suggest we wear the heads of rabbits then it would be within the lore.

The bunny and eggs thing has nothing to do with Jesus or Christianism, though.
It's a pagan tradition.
In the same way you could say that All hallow's eve also depend son religion... but we even got American-style pumpkins.
Again, that's also just a pagan tradition that got refurbished as a Christian one.
The same for Christmas... with is nothing more than the winter solstice, and we got an event to go with it too.
But for easter we already got the Jester's festival, which is enough IMO.1 -
