My tank doesn't die to that. His shimmering shield absorbs 75k damage. It scales with health.
For lower health builds, shimmering absolutely is a counter. Within its damage threshold, it does "cancel" projectiles: no health loss and no cc, and more importantly it grants you the split second you need to roll-dodge and react to the gank.
To be honest, if you're worried about being ganked, as the OP was, it's incumbent upon you--and this hypothetical warden--to always stay fully buffed as you described. Keeping your buffs up when you're vulnerable to ganks is not an unreasonable expectation.

Honestly the overload -> Crystal blast -> overload combo really makes me miss getting Incap'd from stealth. At least with incap I could quickly CC break and kill the ganker. These ganking sorcs are tank killers, and there's no counterplay. It's not fun.

You don't have to in order to counter this though.
If it really is a big problem, use Absorb Magic and stay crouched unless you absolutely cannot.
Also, Radiant Magelight will prevent the stun from stealth, allowing you to shield, roll, heal, cloak, whatever your class has to counter ganks. Magsorc ganking is not an issue and is easily countered.
