I'm fine with that, but from a lore standpoint I would like it if buying one of these special mounts actually meant that you bought a quest that you had to complete in order to earn access to the mount. Wishful thinking, I know.Those were one of a kind horses... not one of ten thousand.
Yes, in a single-player game in which you, the player, were the only Champion/Hero/Etc.
In this instance, we are playing an MMO, in which all players are "the" Champion/Hero/Etc. The dynamics have changed a bit, and that's okay. That's just part of it being an MMO.

They're not lore breaking, it's just silly that you can buy them. Mounts like the Fire Horse, Shadowmere, Arvak or the unicorn should require some questing to get.

Except she actually is immortal. Sort of. It isn't entirely consistent between games, but she's likely daedric in origin: in Oblivion she couldn't die at all, in Skyrim her physical body died, but she respawned - just like daedra do.

Couldn't figure out why every time I'd leave him be for more than a minute, he'd start wandering back to his original location. "They're gonna kill you, don't you know that??"
Finally, after breaking out my weapon once (not in battle), the stupid thing attacked me, so that was it.
I had corralled it behind a closed gate to keep it from wandering off prior to that. When it snapped, I let it go back to its doom... (Made the quest that later involved it much easier to take.)
Anyway, it is lorebreaking...but so are jesters, chefs, and brides riding into battle on guar mounts, as well as Dogs, Pigs, and Monkeys standing in the lava while you fight VS in City of Ash...
It makes $. It stays.
It's really that simple.
