It is still questionable if the Dwemer actually died, the lore says they just disappeared and no one knows what exactly happened. It does seems like they were all killed but they could pretty easily bring them back saying that their technology created a portal to another dimension and they all went through it in the face of total annihilation.
I have thought for a long time that this is exactly what they will do in future ESO games.

Not quite.
Dwemer are as tall as anyone else, far taller than D&D dwarfs.
The story is that their height was slighted in an attempt to diminish their accomplishments (daft but that's lore for you).
Once again Dwemer were as tall as everybody else, not short at all.
Also unlike Dwarfs from other settings Dwemer were extremely magical, far more than the Altmer.

Ayleid - No, they're not. They've intermingled with a lot of races. They still exist. They were driven into exile, never went extinct.

Wow, what a resemblance right? Second pic is taken from Fighter's guild quest that puts you in the body of an Ayleid for a trip in the past. Now, compare with that Altmer in the first pic. Ayleid still exist through inter-breeding. That said, All ZOS has to do is add 2 or 4 more darker skin-tones and some black hair for Altmer, and Presto-bingo. Ayleid race.
Falmer - No, they're not. Pure Snow Elves still exist. It is not unlikely for some to have made it to Summerset or Highrock in small groups.
Daedra - No. All Daedra have free will. Especially the Dremora. Even the ones you summon. http://uesp.net/wiki/Online:I_was_Summoned_by_a_Mortal
It is the mental fortitude, and magicka control of the conjurer to sub-due the summoned Dremora.
Also, the female Dremora in Coldharbour is a great example of Dremora blatantly going against Molag Bal. In fact, Dremora are known to serve whomever they chose. Some clans follow Bal, most follow Dagon, etc. etc. The only tricky part is justifying their presence on Nirn + the whole soulless nonsense. Thus, to that, I'd suggest a Dremora costume that "turns" you into a Dremora. Much like the skeleton and goblin costumes.

Yes, there are still technically Pure Snow Elves, but unless you're lucky enough to happen upon one of them in their secret hideouts, they aren't going to be around in great numbers in the game. But by all means, let's have a playable race where only 0.5% of the player population can play them.
And Daedra don't have free will in the same way that mer or humans in Tamriel do. A daedra may be very powerful, and some of them may even be able to exercise a bit of their own will in Oblivion. But they can only come to Nirn if summoned there, and even when they go around wreaking havoc, they can only do so within the narrow scope of their summons. So again, if players think it'd be fun to play a character who lolls around a plane of Oblivion all day and then gets to spend all eternity cursing one particular ruin, let's add that race too.
