TES Dwemer != Tolkien/D&D Dwarves
(plus the fact that at the time of ESO they've been extinct for hundreds of years)

Dwemer are as tall as anyone else, far taller than D&D dwarfs.
The story is that their height was slighted in an attempt to diminish their accomplishments (daft but that's lore for you).
Once again Dwemer were as tall as everybody else, not short at all.
Also unlike Dwarfs from other settings Dwemer were extremely magical, far more than the Altmer.

Want to see real elves, look at Morrowind or Skyrim. ESO does have some nice touches like Bosmer animalistic head adornments, but by and large the elves are too human. If I look at another player and I'm not sure if it's a female Breton, Bosmer or a short Imperial, something is wrong.

I would love to be able to play as a Dwarf. I usually pick the short races in MMO's (the first iteration of "Lizelle" was a Gnomish Magician in EQ1) I was disappointed I didn't have any options in this one... though I did bring the slider all the way down on my Brenton, it's just not the same

They've always been slow of thinking and brutish.
Orcs have always been listed as the fiercest fighters, and slow fighters die before they get fierce. Thus Orcs have always been physically fast.
Mentally slow, physically fast.

They've always been slow of thinking and brutish.

There are many different styles of fighting. Orcs are defensive heavy hitters, obviously quick enough to actually land the hits - especially when berserking - but they aren't normally associated with the fast, nimble kind of combat. That's the domain of Khajiit, skirmishing Argonians, even Redguards (who "are also physically blessed with hardy constitutions and quickness of foot.")
