So sorcs are not just range dps. Every class should be able to do a tank, dps or heal role at vet levels. (Just most sorcs only want to do range dps)
At the moment, every class CAN except the templar. It can not do ANY role as they are out of resources too fast. You just have to watch the dev's own videos. They NEVER take a templar as they are out of resource too fast and therefore add nothing to the battle.
I have a V12 templar, dk and sorc. I can heal trials runs without issues on my sorc and even copied the dev's build and tank a vet instance on my sorc. That is something I could never do on my templar.
So I will add my gold to the pool if the dev's can redo the new vet instance with 4 templars (1 tank, 1 healer and 2 as dps) . They will not get past the first boss before all out of mana and potions and ... dead.

DPS is damage per second. That is, by definition and convention, the measure of damage over time. DK and Sorcs can just about touch that number, I pull about 650 on my Sorc and just over 700 on my melee DK.
The templar is a jack of all trades class. By class abilities alone he can range DPS, melee DPS and heal team-mates. In comparison Sorcs can only do ranged DPS and DKs can only do melee DPS.
What would the point of those other classes be if your Templar could do what they do as well as them, on top of your other abilities?
You've confused play as you want with being the best at everything whichever build/class you play. That's an unrealistic expectation and I'm happy it's not that way.
PS: I do play a templar too but with a healer/tank build, so I know the class a fair bit. I don't competitively DPS with him obviously.
Edit: I saw your other post saying you can't do over 350 DPS with your templar. That's a bit of an underestimation. With 2H (proc'ing burning DoT), Momentum, Flawless Dawnbreaker and high weapon crit, I can do ~300 with just light attacks. I believe 500+ DPS can be achieved, that'd be a more realistic and interesting challenge I'd like to see
