Preferably one that is an archetype of their race and not completely opposed to everything that has ever been presented about it in Lore. Outliers are fine and dandy, but when we only get one (if that) of each race as a Companion I'd sure rather have one that didn't try so desperately hard to break the mold, just for the sake of difference.
Don't give me a peacenik Orc or a vegan Bosmer.

That seems like a silly reason. Do you really cycle through 8 different companions on one character?
Ceasing production of a popular feature because you would need to pick and choose on a UI menu is a bit silly.

Ceasing production of a popular feature because you would need to pick and choose on a UI menu is a bit silly.
I've so many different characters that I need to standardise their setups somewhat to so I know what I'm doing on each one.
DPS always have their spamables, executes, and emergency self heals on the same buttons.
Tanks always have pulls, taunts and emergency self heals on the same buttons.
Healers always have the burst heal on the same button.
I can just press the appropriate button and get the desired result without looking away from whats in front of me to check my setup on that toon.
The wheels are similarly standardised.
I don't need to look to know which button is food, cheap potion for overland, good quality potion for real content, cosmetic toggle, or banker/merchant/armory summon on any given toon, its the same standardised setup on all of them.
Same deal for my tank/healer/ranged dps/melee dps companion summons.
ZoS can make more companions if they want,I ain't gonna stop them.
But if they don't add another wheel to go with 'em, I ain't gonna use 'em.

Do you also think we shouldn't get new cosmetics/emotes/etc. because they also don't fit on a wheel? Should we have 50 wheels to account for them all? Such an odd point of view, even after reading this.
It seems your concerns may be pretty niche, since many of us are capable of customizing our alts depending on who we are playing for things you have plenty of time to think about out of combat such as which companion you are dragging along.
I do some of what you say for spur of the moment or frequently used options - like you said potions, the generic button to summon different assistants, and the basic summon slot for companion. But my alts usually only need one companion, maybe 2 depending on what I'm doing, and don't even unlock or slot those I don't need or use.

The past couple months I played through the Aldmeri Dominion zones again and they reminded me how much I like the bosmer. There's so much cool stuff about them to work with and god it'd be a shame if we'd get cultural subverter Eveli Sharp-Arrow II.
And I'm kind of scared of an orc getting the made-for-you-to-laugh-at treatment like Lurbuk from Skyrim, although maybe that's less likely to happen with a companion character.
