I have personally no use for watching anyone play a game I play myself. Not only that, I don't watch tv, movies, youtube, twitch etc. SO not my thing....
Videos for dungeon guides I say in relevant except that, watching other playing games is kind of weird I say, unless they are funny or do funny stuff. Watch TV and youtube
Grinding just make you go in circles.
Asking ZoS for nerfs is as stupid as asking for close air support from the death star.

I'll watch specific ESO streamers for their personalities, and I'll sometimes watch ESO streamers who PvP, but I don't usually watch ESO streamers who spend almost all of their time running dungeons or trials in a group-- unless I enjoy watching them for their personalities, or if they're talking about the mechanics to help people learn the dungeon or trial. I watch Twitch on my iPad while I'm playing games on my computer, so it's on a small screen and I'm more focused on my own gaming-- hence why interesting personalities and useful pointers are major draws for me, because I'm listening more than watching.

I follow a number of games and game series, and you can see how the popularity of certain games waxes and wanes. Newer games will draw huge numbers of viewers for a while, but after a few weeks the numbers will drop. Older games that weren't drawing many viewers will suddenly have a spike in viewers due to something that made those games popular again (at least for a time). One thing I can say about ESO is that it seems to have fairly consistent numbers of viewers.

If I watch an Eso stream im most likley watching a PvP stream even tho i play PvE 75% of my Eso playtime.

Best PvE streamer i think is Xynode because he do dungeon and infinite Archive runs and are mostly postive, many others dont really do anything except talk with chat while running around in circles with their char.

Also there are no Eso streamer as I know of that useally have thousands of veiwers no matter what game they play.

Look at D4 for example when those big streamers quits the new season, D4 twitch viewers will drop drastically.

Looking at the SteamCharts numbers, we can see that ESO have almost the same number of players online as Albion Online, Path of Exile, Black Desert, Diablo IV, etc... But, if you look at the top most watched games on Twitch (https://www.twitchmetrics.net/games) this month or any other, we can see ESO way back at the bottom of it. So, i was wondering, why that happens?
Is the game boring to watch? Need more good streamers? No time for it?

My personal opinion - Any game is boring to watch If I am not participating and making decisions. I gave up on twitch. When they run in a raid you can't make heads or tails of it with all the name tags. And when they run solo, they talk to Chat constantly, and they interrupt what they are doing every time someone joins the channel. You can watch for 2 hours and they never actually accomplish anything in the game. But you know more about their cat that you ever wanted to.

Guys, before you read the first post, did you think the OP was wondering why so few ESO players are interested in adult RP?

    ..or was it just me?

I don't really care to "watch" other players. There is enough video out there to watch for literally years without watching some streamer play an online game. Watching streamers other than for learning purposes is outright boring. I don't see where video games can even qualify for "entertainment". Unless it's something funny. Like Lerooooyyyyyyy Jenkinnnnnnns ( and that was years ago)
