I mean.. you're describing my gameplay in most dungeons here as well, after you've run them 100s of times you kinda burn into your memory what attacks to dodge, and which ones you can just block cast through, and I always bind my dodge roll to the page up button on my mouse so its just there under my finger ready to go.

I think what you're seeing happen there is called Passive Dodge (a hidden combat mechanic that has always been in this game). It's random and usually happens when your character has their back turned and is moving away from (fleeing) an incoming attack -- they'll do the "side sway" and then it says "Dodged" on the screen while completely dodging that attack. There was a thread a while back where people were claiming that there is no Passive Dodge in this game anymore... Well I see it happen to myself several times every week just in dungeons...
Or maybe it's because of lag/desync. It's kinda hard to tell what's going on sometimes with this game...

Passive dodge removed from the game in my knowledge as well. That was the best thing in this game to be honest. There were some sets/modifiers that you could increase your chance to dodge it was so fun.
You'd feel like agent smith after dodging 3 consecutive dizzy swings with a step to the right. I think it needs to be in the game. Constantly rolling around is dark souls thing, we gotta get our dodge chance back

Yeah, but as far as I know the game's animation doesn't display that dodging. I should know, because I wear a 5-piece set of that armor on my PC EU main, and I've yet to see a dodging animation after I successfully block an attack and the set procs-- and it's easy to tell when that happens, because there's a burst of light.
I believe the dodging that the OP is talking about is roll-dodging you can actually see, not a proc from a set.
