I am happy with my current outfits the way they are, but I will get the shoulder hide ability and it might come in handy in the future. I know I have struggled with shoulders on outfits before.
I will hide shoulders gear in my main and some alts
I'll be hiding shoulders on my main, since I currently use the light variant of Akaviri to kind of do that already. Depending on the outfit, I'll be hiding shoulders on other characters as well. But my current "main," or the character I'm playing most at the moment due to a couple skill changes with U37, the shoulders I use on that character's outfit is exactly what I was going for.
It just gives more options for outfits. I'd like to see flaps and hip armor to have a hide option as well, since we know the option exists in game due to it being available in a PTS a while back along with the shoulders. I'd use hide flaps and hide hip armors far more universally in comparison to the hide shoulders option.

Shoulders don't go with every style/look you're going for. Right now, my main would look better without shoulders, so the best thing I have is the fur around the neck, which doesn't blend well with the skin I have on him.
If you want to see what all the craftable lights look like in ESO, use this command on PC NA.
