It's an MMO overland is meant for grinding.

The challenging content should be PVP, trials, dungeons, solo arenas, etc.

Sometimes I think ESO overland is too easy but then I remember how awful Everquest was. You'd grind the same camp for hours and wipe if you pull 1 too many mobs. So yeah I kind of agree to an extent.

Its simple. There should be difficulty settings and people can choose on what level of difficulty to do the Overland content. They are huge, and this is a huge in terms of replayability.
Overland content currently are terribly easy. Peoples want challenge. And also one of the main reason why there is such a skill gap is because the game absolutely not preparing you for what is coming in terms of trials, dungeons, arenas, PVP and so on.
Main reason why people complain so much. Playing something on afk-mode and when the hard things come they are feeling like they are playing in PROS lobbies in CS:GO .

That's what made Everquest such a great game back in the beginning. Yes, it was challenging but learning the game and working together to overcome those challenges gave you such a great feeling of accomplishment at the end. I miss trying to run through a high level zone, the tension and anxiety to make it to the other side alive was so much fun. Doing corpse pulls out of Fear at 2 am in the morning, with all your gear banked because you knew you'd get ganked a few times trying to pull bodies to the zone.

Ahh...those were the days but I was much younger then and had better reflexes and better vision

Should it be soloable..sure. There should be some content that isn't.

However a player shouldn't be able to round up literally hundreds of mobs and then 1 shot that. It's silly and stupid.

Yeah EQ was a little over the top, specially with the ability for mobs to see through and walk through walls etc. That being said it required a little to much grouping you could sit for hours looking for groups in areas and that wasn't good. Again a game like WoW hit it almost perfectly at launch. You could solo like 90% of zones. The rest was group content, and at times you had to be careful just running in.

There's a megathread for this topic. That thread is for all opinions related to ESO's overland in terms of difficulty.
