Have you ever dodge rolled or blocked all of a sudden after casting a skill? That is an example of animation canceling. I too used to be a hater on animation canceling.
This attitude (including in my case) tends to come from a lack of understanding of why it is actually has an important purpose in combat oriented games, and also an understanding of what it really takes to increase one's own damage. If you can't cancel an animation, you can't do things like block an incoming attack quickly or dodge roll a fast moving aoe. You'd have to wait for the entire previous skill to play out and it would not feel responsive. Other MMOs that have dodge rolling also have some type of animation canceling.
You also don't have to do animation canceling as part of your rotation to be good. You can, and most people start to do it eventually without trying. I used to be very bad at dps and now I'm pretty good, and animation canceling is not that big a part of it.

Maybe that's why other games don't let this nonsense go on and on, unlike ESO.
Not recognizing animation cancellation as an exploit to begin with and cutting it out of the game early is ZOS's biggest mistake and they have been paying for it ever since trying to keep up with allowing this "play style".

This need some serious changes to encourage players with contents
No matter how you rework the animations there will always be someone out there cancelling them cause they're not fast enough. Instead the animations should blend together so its not so jarring as it is now.
Some animations, like newer skill lines, can't be cancelled. I wonder if it would be possible to simply make it so the old ones couldn't be cancelled either?
