TL/DR: inventory hell kills the fun (at least for me)!
This week I decided to give ESO another try after several months...
But a maxed inventory (bank + storage furniture, backpack + riding lessons on 10/10 chars) that's almost full, or even above max (my bank, I had eso+ in the past), made ESO straight out unplayable for me!
I checked AlcastHQ for the "flavor of the month" Sets, and spent some hours deconstructing/selling a lot of things. But it's still a total mess, and I finally lost hope and gave up.
ESO has too many things to collect (gear, consumables, crafting materials/ingredients, ...), but offers no help to effectively manage all that stuff.
AddOns might help, but I'm on PS4.
ESO+ might help, but I didn't want to spend money right away.
Maybe they'll come around one day and offer tools, bigger space, a free crafting bag, or some other means to make it less of a nightmare, or even enjoyable to collect (and keep!) all these things.
Or maybe I'll come around one day and just scrap everything, and deconstruct, sell or destroy all my shiny things and start over. :'(

ZOS strategy in regard of inventory structure design is to sell chests in the store instead f symply add a "grid" to sort/hide stuff. Absolute half assed job done there.

Have ESO+,17 characters, all chests and way too much stuff. Actually going through what i have, and seeing what I actually NEED was helpful & cleared a lot of space. (4 sunderflame arms? Why?)
But you need to be ruthless.
(And also admit you might have a hoarding problem 😆)
I try to have one of everything as well. I will share how I organize items. This is with ESO+, nearly every character slot maxed, max bank space, and all 8 storage chests. If you do not have ESO+ you can use the extra character slots for crafting materials.
Starting top to bottom I use the character login screen and character order to store my gear. Hopefully this helps some of you visualize a way you can be organized in this game. I have 90% or more of the sets that have any relevance in the game. Try to always leave 20 or more bank space for moving items around.
Toon 1: Amulets
Toon 2: Healthy or Heavy Armor Set Rings
Toon 3: Robust or Medium Armor Set Rings
Toon 4: Arcane or Light Armor Set Rings
Toon 5: Heavy Armor Chests/Legs
Toon 6: Heavy Armor Gloves/Boots
Toon 7: Heavy Armor Belts
Toon 8-10: same format as above but medium armor.
Toon 11-13: same format as above but light armor.
Toon 14: Shields
Bank: Blacksmith Weapons
Small Storage Chests: Staves
Large Storage Chests: Monster Helmets/Shoulders.
