I'd love to choose between the three beginnings when creating a new character, or even if it randomly rolled one of the three.

IMHO Wailing Prison is NOT a 'fantastic beginning'. Starting in a cell where yu don't know WHY or HOW you got there is ridiculous. You get told later Manimarco murdered you, but you Don't have any idea How or Why this was done.
The new starts allow you to Begin the whole Main questline with a sense of logic and continuity. You get Lured into the trap and then everything from that point makes sense. There is a completeness and Logic to everything.
IMHO Leave things as they are.
The game started in The Wailing Prison. It is a fantastic beginning. It is awesome storytelling that really sets up the game. Kudos to the ones who created the original start.

You can literally still do the wailing prison. All you do is skip tutorial to skip the DLC intro, then you'll instantly get a quest to talk to a Hooded figure... which then leads into the old intro within 3 seconds....
