2. I do the 1 month cancel thing all the time, you get an e-mail that your sub is canceled and you have 30 days left.
3. I logged my account and I have x/100 transmute crystal space + mats aren't traveling to the craft bag, so I assume it's indeed not active.0 -

You should get all of the time you paid for.
So if you buy a 30 day subscription and then cancel it after 5 days you will still get another 25 days of ESO+, it just won't auto-renew after that. (I'm told it's different on consoles but on PC there is no option to just buy 30 days, you have to set up a reoccurring payment and then cancel it.)
However there are a number of potential problem with it. The most common I've heard of is actually the opposite of the OP - a cancelled subscription still auto-renews so you end up getting, and paying for, twice as much time as you wanted. I've also heard of it simply not starting or taking a day or so to start while the 'timer' still goes down (so you pay for a day of ESO+ you never get). And of course people on Xbox never receiving their crowns, which happened every single month for some people.
But none of that is intended, and neither is what happened to the OP. Unless you get banned from the game you should get all the time you paid for.
