You can do it on foot with no sneaking and no wall hugging at all... Why does everyone make such a big deal out of this? I'm on my phone atm otherwise I'd just draw the path I take. Never been caught.

I do it on a horse because it works. I normally ride when I am going distances. If figure I am going to be mounting up anyway, so might as well do it after grabbing the pig.

Both work. Horse, or running. It's not really a matter of speed. It's a matter of staying out of her detection radius.
This is the route I take. Grab the pig. Stay on the path. Assuming you have no bounty the guards will not bother you at all. Take the east/left path and up the stairs. The only spot where the butcher will appear on this side is when she comes out of the inn, marked as B on the map. So to avoid her as soon as you come up the stairs cling to the right side of the path. You can move between a rock and the fighters guild tent (T) there, or you can move through the tent or even behind the tent. Matters not, she shouldn't see you. I usually just ride right through the tent anyway. From there on it's straight to the city gate and it's done.

My path is to veer hard left (east) at T/B on that map, follow along inside the wall, hop over the low walls on the way to the south gate out, and head on out through there. I never see nor hear the Butcher going that way. I'm always mounted for it but some of my mounts are at 6% speed so might as well just run, ha.

@Dont_do_drugs I went right and I ran straight into her. She was already at the path ahead of me even though I was using rapid
