A Tank that Heals/supports allies, a tank that buffs the team/debuffs enemies, a tank that Chains, Talons and snare the enemies or a tank that can deal damage? Being a damage sponge won't do much in PvP, you need to have a purpose, how do you want to play.

It makes you stronger the more damage you take basically, but something like that video shows only works in CP PvP, cause you need a lot of block cost reduction to be able to block for as long as he did. He was also using the Spell Wall ultimate for a low cost ultimate to help with sustain as well that it blocks and reflects for him. The times in the video when he got kills was either with someone else or when he could reflect things and self heal better than the enemy. The big thing with those 2 sets i mentioned is that their weapon damage increase will help you survive better since it will make your vigor stronger as well as your rally/forward momentum, and while blocking in full heavy with CP passives and blocking mitigation of a sword and shield you can survive a lot of damage, as well he uses absorb magick to heal together with his Vigor and rally to survive better against magicka players.
Again this is just a guess what he is doing, can't know for sure but if you want you can always try and see how you do.
Probably Blood Spawn / WW Hide / Fury or Seventh Legion. I've run it, it's stupidly tanky but if people feed you damage you can turn around, pop your S&B ult and go full offensive with high weapon damage from your wrath stack + Fury/7th Legion proc.
You have to take these videos with a grain of salt. It's a highlight reel. The groups are not coordinating to burst, and s/he may not be running the same build in all the clips.
https://youtube.com/watch?v=PibDjqzKo9Y Well, you can put me in Kodi's exact build and that doesn't mean I play like Kodi. I can also make a highlight reel that makes me look like a pvp goddess.
When you see these DK berserker-type builds they are almost always running some variation on this build; heavy armor, high ult generation; tank until you can spank. Often they are orcs for the passives. You can almost always tell by the way they play if they are using the build to it's fullest.
I've tested many (if not all) of the oddball defensive sets -- albeit from a magicka perspective -- and haven't found anything really overwhelming. Many of them have visual queues that I don't see in the video. It's of course possible that these folks are exploiting something that's broken or OP and won't reveal their builds for that reason, but these kinds of exploits don't stay secret for long so I kinda doubt it.
Best of luck theorycrafting. If you haven't found it yet, this page can help a lot: http://en.uesp.net/wiki/Special:EsoBuildEditor
