I personally don't. I have only 1 character, always been 1 class, stam NB. You can try YouTube. Search something along the lines of "ESO stam templar build". Then use the search filters to filter videos posted within the last month, week, day, to find builds pertaining to most recent game update.
Assuming their websites and builds are very up to date, you can try the usual suspects like Alcast, Blobsky (wtf is up with him? The man is very skinny not blob), Deltia, Sypher, etc etc. Also create a thread in the "Player Guide" subforum here and you should get responses.
Edit: But also realize many players are milking the pirate set for all its worth right now.

imho public stamplar builds are not optimal at all. but that may be a matter of personal taste.
on topic: I'd go for stam NB, non-ganker.
As stamsorc you already played the relatively forward great-stats high-def + high-off archetype. As a templar you'd trade purge+potl burst for easy sustain and better incoming health + mobility but not too much change the playstyle. As stam dk you'd trade mobility for def and the possibility to block way more.
As a stamblade, however, you would be looking at a playstyle with larger differences, in particular a rather bad skill spammer but with great bursts and some stuff that is really hard to master. I highly respect stamblades I duel that make a lot of use of cloak but basically never cloak twice in a row: they just disappear for 1-2sec to position themselves etc. I can see how such a style is not easy to master, though. Coming from stamsorc I think this might be a nice way to mix things up.
