In the past, when Quintus reached low health, he would start to summon the gargoyle. Once the gargoyle is summoned, Quintus will die a scripted death. I always tell people to stop attacking Quintus once he starts summoning. First, because it's a waste of resources since he's going to die a scripted death. And second, if you do happen to kill him before the summoning is complete, the gargoyle will become bugged and not spawn.
It'd be much easier if they just made the gargoyle spawn even if the summoning isn't complete instead of making it so that Quintus can only die via his scripted death, which is apparently bugged now.

In the meantime, please exit the dungeon and wait 20 minutes before returning to completely reset the dungeon. When attempting to complete the dungeon again, please make sure to avoid killing Verres until the gargoyle is fully summoned
