I would contact your CC company and dispute the charges for the Crowns spent. However you acquired them.
Honestly, I wouldn't bother.
I'm no legal expert but realistically this was a bug, an unintentional glitch. ZOS responded in a timely manner with a sufficient good faith effort here, and offered reimbursement in the form of more time with double the paid XP bonus.
Expecting more than that is just unrealistic IMHO.
Sure you could spend the time and get really upset and try pursuing some recourse but honestly, legally, I don't think it will go anywhere and besides as they say...
That ain't the hill to die for.
If it were me (and I used a few of those XP items myself), I would simply cut my losses and enjoy the remainder of the extended event.

You are wrong there. Since the scrolls are 50% and the cake is 100% the cake overrides the scroll just like it does plus.Remember too ambrosia and the xp scrolls never stacked before they wont magically start stacking now.

As ADarklore points out, giving an extra ful day beyond the expected duration of a free 100% XP bonus trumps the loss of 1 day of 50%.
It IS a form of reimbursement.
Expecting them to devote man hours to pouring over logs to micromanage who had what buffs at what times for how long is, in my opinion, simply an unreasonable expectation in this case.
Enjoy the extra time with massive XP boosts and the freedom to grind in cracked troll cave in PVP to your heart's content!
