You wont be doing DPS/Healing if you're eating dirt.
No matter how good your group's tank is, sometimes you will catch aggro. For example, in the final boss battle of Blackheart Haven, the boss will frequently turn your tank into a skeleton which has no taunting abilities and guess who the boss runs straight to? You. You have to be able to take some hits while kiting and dodging adds which also are going to be drawn to you due to you healing-induced threat. You need to be able to survive that heat and with low health, you wont stand a chance. And guess what happens to your group when you go down? They go down with you and the encounter is over.

Hybrid builds that use magicka and stamina to equal extent are problematic (at least for group PvE) as pure magicka or stamina builds will do more healing / damage.
For solo play or PvP it might be a good option.
Magicka build use stamina only for blocking, dodging and break-free.
Stamina builds should only use magicka for utility skills like buffs and debuffs.
If stamina builds use magicka for healing/damage skill it would be a waste, the heals/damage will be very low but drain a lot of magicka. To improve sustain you can use Rally from two-handed to get stamina based heals and use repentance to restore resources after you kill enemies.
The resource managment problem of hybryd builds is not only in resource pools but also in armour bonuses. And you can get only one full armour-5 bonus.
It's up to you really, but if you wish to join any group play events, I recomend you to heavily reconsider getting a hybrid build, and stick to either magicka based healing/dps or stamina based dps.
Survivability for magicka based templars is very high, spam puncturing sweep and in case everything goes wrong cast a Breath of Life. In group play, equipt a resto staff, keep rapid regeneration up and use healing springs and breath of life to heal with. Cast a blazing Spear at the tank every once in a while, to provide him with a little stamina.
Stamina templars can also cast Breath of Life, but it will not be a good, because you choose to spend attribute points into stamina and weapon damage. Stamina templars can have higher dps, but at the cost of lower survivability and their healing capablities are crippled and not worth spending points in.
In terms of hybrids, the one viable hybrid imo is being a tank. You can create a meagicka based tank, or a stamina based point tank but with magicka based gear. This will help with healing spells and other utility spells that will help with eitger survivability or damage mitigation.
Truthfully, tanking requires minimum stamina usage for taunts and blocks. However its all about resource Management, which is an integral part of tanking, heck for all roles.

I already have a syamjba build DPS Nightblade, and I'm working on magicka build Sorcerer, so I'm looking for something a little more diversive ... I was thinking something like 15 health 15 stamina 20 magicka
My stamina build went 20 health, 2 Magicka and 25+ stamina and I feel I can drop some health n off set it elsewhere but as my Nightblade doesn't really need the off set I thought I'd try it with my Templar.
