Gryphons in ES are not "hybrid animals", they have characteristics of other animals but are not directly related to those animals. We will find out more about this Quasigriff in the future.
The winged gryphon looks more like a four legged eagle and does not have lion-like hind limbs. The Quasigriff spends all time on the land so it is adapted differently.
Quasigriff is another one magical hybrid, like mantikora and vvardvark. You can read the descriptions here:

Sure I can see now the magical hybrid of an actual Gryphon (fore body) and a mammal (hind legs).
Seems legit to me,
yet, just like 95% mounts among the Shop ones, we should witness more of their actual use by actual NPCs in the actual game's world.
You know, feel of immersion and consistency between the PCs and the NPCs, stuff like that

Those are NOT reskins. They ARE new 3D models and textures. People still spent hours making them even if they use the same skeleton and animations.
Calling it a "reskin" implies that there was little effort involved, which clearly isn't the case if you understand how these things are made.
