I only play Templar. If I feel like playing like another class, I can change my weapon, glyphs, or chuck some invisibility potions to get closer to the desired effect. The playstyles and visuals of the other classes just don't cut it for me. Eternal servant of the Aedra.
My original main - on console - was a NB. My new main - on PC - is a magsorc.

I've had characters from all classes, mag and stam, but 'mained' only MagSorc(my beloved first character and crafter), MagBlade(did most of the HM contents for the first time with her) and MagDen(currently maining). I still play with my alts but spend most of my time on my 'main' character.
In my forays in PC-EU I mained my Almer Sorceress (my 1st character ever) while having a variety of alts, all of whom I really like for the variety of gameplay.
Very late I discovered that starting a new character in PC-NA gave me a new game. No CP, no money, no good gear and a great deal of challenging fun. In this scenario I started on what I call my forager, the equivalent of whom gets a lot of playtime in my PC-EU. This one will once again vacuum the starting areas as I need lots of crafting materials, gear and gold. To aid in that endeavour I've already maxed out scrying/excavation for the lovely shiny chests. I'm also maxing out Legerdemain for the easy lockpicking.
Quest-wise I'm doing the main quest as my goal here is to do things in a chronological order and I think the main quest still provides the best introduction to the game.
So my main right now is a Khajiit Nightblade dual-wielding ball of claws, the rest of the roles will be alts created in the new chapter.
I have too many characters and my favorite tends to be who ever I just logged in with. I've even announced "this is my main now!" and had that change within a day or two. Thankfully ESO doesn't have a lot of branching in the storyline or I'd be really in trouble as I'd be forcing myself to start new characters to go through various story branches.
I wouldn't say I have a 'main' per se, but I tend to go back to Wardens and Templars for the most part. I have a DK and a NB tank and some bowgank , and thieving/DB knightblade, but most of my PVE DPS are those first two.
My first char played since launch is a DK tank --- no class SP at all, sword/board only. I wanted a hero character that shunned all magic. He's my most played & favorite, these days I play a mag-sorc w/ pet. This is my evil character reveling in the dark arts, he's a master vampire/thief/assassin... From there I have about 11 other characters I play around with various builds but the first two are my 'main'
