And so I treat it the same way.
Plus, every time I have watched them, ZOS staff, from Matt Firor down, treat it as such.
Yeah Gina gets triggered by "E SO"

I get triggered by "E SO" Still I'm Aussie so I'd be up for calling it E.C.O. (I'll let you figure out what the C stands for)

They are three separate words, so the first letter of each word gets pronounced - E.S.O. being an acronym of Elder Scrolls Online. If the actual name was Elderscrolls Online or Elder ScrollsOnline then maybe ES O or E SO would make sense

    Do you also say Z-O-S?

I tend to err on the side of caution by saying the full words "Elder Scrolls Online" so I don't confuse my friends over at the European School of Oncology when discussing their Employee Stock Options.
Really we do it without like, the musical instruments. This is the only musical: the mouth. And hopefully the brain attached to the mouth. Right? The brain, more important than the mouth, is the brain. The brain is much more important.

American, West coast, pronounce each letter individually and with the E as long vowel.

    “Eee ess oh”

Although if it had come to be known early on as The Elder Scrolls Online, with TESO as the acronym, I would pronounce it as a single word “teh-soh”

    Ehsoh, one word, German pronunciation.

If an acronym can be pronounced as a word, it's not uncommon that it's done that way. There's no hard rule for this.

No, I don't say either ZOS or Z.O.S as both sound daft, I prefer the full, formal name... and as for rules, that's what grammar is all about. There is very much a rule that applies to this, as this kind of "acronym" is called an "Initialism" and each initial is pronounced separately

But there is no rule what kind a certain abbreviation belongs to. There are some deliberate acronyms in the narrower sense (like Laser) but there are lots of abbreviations that fall into this category just by usage. NATO is a word, USA is an initialism. Why? Conventional usage. ROM (as in read-only memory) versus FAQ (for most people). There's no inherent reasoning behind this, it's arbitrary. And as FAQ shows (which is actually pronounced "fak" by some people), pronunciation doesn't even have to be uniform.

ESO = Eee Ess Oh. I'm American.

My Colombian friends just call it "Elder." I assume that's because "eso" is already a word in Spanish.

ZOS = Zee Oh Ess. How else would you even pronounce that?

Yes, cause this thread is so captivating that the devs can't take their eyes of it to do their job, for shame OP for making just a dastardly thread. I can picture OP now:
