Although almost all of my characters are DDs, I have a Healer and I like her a lot. It is the first time I make a support character since Ragnarök Online, over ten years ago, and I'm still learning, but I'm enjoying healing in this game so far.
Just so that everyone knows, my Altmer still can't have black hair. About a dozen of Altmer NPCs in the game have black hair. Just saying.

Aerindel, Altmer stormcaller: After extensive research, I've come to the conclusion that doing the thing would be a waste of resources. Liliel, Dunmer pyromancer: Aerindel said I shouldn't do the thing. Something about "resources". Gyda Snowcaller, Nord cryomancer: I will find a way to do it that won't waste resources and make Aerindel proud of me. Beatrice Leoriane, Breton vampire: I persuaded someone else into doing the thing. You are welcome, dear. Sahima, Redguard performer: Doing the thing sounds awfully unpleasant and really not my problem. Ellaria Valerius, Imperial priestess: I'll pray to the Eight for the thing to be done, if it is Their will.
I have a dedicated healer and just recently leveled myself a tank up. But hey it is still a lot of fun to explain dps that they have tomove out of aoes and that healers cannot heal them up when they have full aggro on trash groups.
My Templar is a Healing Tank, so yes I technically do both, mainly though I just Tank (and will likely never make a DPS just because of the long Queues, I don't know how people stand it).

I had a tank for quite a while, but I just got annoyed with the lack of tank-threat and aoe taunts normal in every MMO. I might respec back to tank one day, but probably not soon.
My healer was supposed to be a Templar dps, but got so frustrated with the DPS queues I respected healer 'temporarily' just to level up quicker, but turned out to love it. (I heal in every other MMO, as well as tank, so I don't know why this was surprising to me, and only just recently tried it)
Don't even get me started on how entitled DPS are in this freaking game.
Don't even get me started on how support roles are sensitive when critized. Ooh wait, I forgot that generalizing is a bad thing.
It's ok if you like to stand in red while you hand out the punishment. Just don't cry at me if you get one shotted. And just for reference, if you and the rest of the team are going to stand in stupid, please stack on the tank so my resources can keep up.
I will try and tank when I am done leveling the staff skill lines(I tried my NB as magica but didn't like it, and now the completionist in me wants to get staffs to 50). I would like healing but I am a khajiit NB and I don't see how it can work well (I won't level an alt as long as the mount training work like it does, and besides I have never enjoyed alts in any game, I have always preefered to play on 1 at a time)
Edit: I did tank in wow since ICC was released up to Mop where I played DPS on a monk untill changing him into a tank too (and in WoD I played healer untill I got bored of wow and quit). I like to play those supporty roles it feels like I am helping my team way more than as DPS (even if I am top DPS)
I think Healer is the role I am most comfortable with, even from other games I've played. My first Veteran char in ESO was a Tank, and I liked that a lot too. I actually find DPSing harder, since I can get a little anxious in the heat of combat and not be able to pull off my rotations properly. Then I get more anxious because I'm not doing the best I can. :P But I clearly just need practice.
I just recently changed with Imp Stamplar DPS after getting bored and annoyed at the group tool. Never ran a support/healer before but love it. Still get to do some damage when i can and still over-heal at times but really enjoyable and finding I'm getting much better at weapon swap.
Also appreciate where i was probably going wrong as DPS in terms of position and strategy to make sure healer isnt constantly working to keep me alive.
I made a tank, ran it to v16, but got tired of the lack of area taunt and the fact that most big bosses seem to mostly ignore taunting. I have a healer, which I ended up using for PVP instead, because well... It's a templar Having a nerfed breath of life in cyrodiil isn't quite as bad, as self heals hardly work anyway (only briefly). I enjoy the PVP but I think both tanking and healing roles need a kind hand. Stuff like replacing block cost reduction with a silly damage boost is just nonsense. Instead replace eg. the healing fountain in the undaunted skill line with a taunt toggle that makes any attack taunt while on. That would make tanking slightly more useful. Life is too short for single target taunts.
Have been healing on my sorc since PC launch. With DB I am planning on my templar going for the heal-tank role. So, I used to heal only, but soon it will be both!

Tried both, healing is ok, tanking is awful. The tools they provide to do so and the game mechanics are both awful and actively penalize tanks. I know every tank in the game must be excited at the upcoming DB changes to Bracing, even more increased stamina costs for blocking (and Templar's debuff removal nerf + overall healing nerf) and the rather transparent attempt to force you to remove your DPS champ points and put them all into "tanking" nodes.
I tank or heal on all four of my VR16 characters. With careful planning, you can achieve very substantial swings in stats with just a swap of gear and food. For example, my DK has 18K health and 41K magicka in her DPS gear. Swap her into her tank gear and change to purple food, and she has 28K health, 26K magicka, and 20K stamina.
Magicka nightblade: DPS (Juli, Willpower, and Ner) or damage-tank suited for 4-man content (Kag, Willpower, and EG)
Magicka dragonknight: DPS (Juli, Willpower, and Skoria) or traditional tank for trials (Tava, Ebon, and Blood Spawn)
Magicka templar: Healer (SPC and Worm Cult); he can do a bit of DPS too in that gear, and he borrows my DK's DPS gear when he needs to be a more serious DPS or when he does vMA
Magicka sorc: DPS (Juli, Willpower, and Ner or sometimes Kena) with a healer setup (SPC, Willpower, and Ner) using the pet heal for easier pledge grouping. (In my half-year battle against RNG for the an all-divines SPC set, I also ended up with three full 5p SPC sets--my sorc just uses the bad set with Well-Fitted instead of going through the trouble of borrowing my healer's.)
Being able to tank or heal makes it so much easier to do pledges. And experiencing the game from all three perspectives really helps. It's nice for a healer to understand what kind of support the tank needs, both in general and also in specific situations (e.g., knowing which phase of a particular boss fight is particularly taxing on a tank's resources). And as a DPS, I have a much better idea of what enemies are actual threats to a DPS's survival and which enemies aren't worth the bother of taunting, and I use that when I'm tanking.
I play all roles, diff characters tho.
I'll respec and re-gear from time to time or have a build that allows me to swap armor and weapons/skills too
Then its just a CP change but I think you're better off trying out each as with each major change, whats fun can be an obvious and drastic re-roll of a new character.

I have a Dedicated Tank and a Magic NB that can tank, heal or DPS
Honestly though, I feel heavily handicapped healing on a Non-templar just because I feel as though I'm not as supportive as I'd like to be (shards/repentance has no equal for non-templar healers) I can throw out all the heals/buffs/debuffs/etc I want but it never feels like it's enough.
I hate tanking. With a PASSION, I hate tanking however unlike the DPS that are so selfish and never make a tank, I suck it up and actually do it, else I'll never get anything done.
All my magika characters can heal and heal just fine and dps well. My stam characters can tank with one setup for be a solid tank.
Always thought it was odd when players only play one role. Just as odd as the comments that I am a better healer/tank than a dps. If your good at one role you'll be good in all roles. Especially when it comes to healing since I solid healed in this game will do almost as much damage as a full dps, while healing.
But I'm tired of having to collect 700-ish mats to craft sets specifically for that >_>
