My issue is I'm a little nervous asking for help from a crafter in-game. How do I know they won't just up and leave with the mats I trade them.
If something like that happens is it a reportable offense and would I be able to get the material back?

Make sure you have All the items necessary, nothing drives me nuts more than someone handing over incomplete materials. Please know exactly what you want before asking, we are online to play, we are going out of our way, please don't waste our time.
Personally I prefer being mailed the items that way I can just zip on over to the crafting station.
I typically craft for guildies, however if someone goes outta their way to message me, ill at the very least respond, usually create whatever it was they wanted.

Agreed. I craft for free all of the time, made some good friends that way. Honestly, overall, I've found people pretty trustworthy when it comes to that stuff in ESO. Hell, back in the pre-trader days, I can't tell you how many times I accidentally sent money and items instead of COD, only to have that person send the money back and share a laugh in whispers.
