I could be mistaken, but I went to do a survey with no progress on the bar and had the endeavor tick as completed after I collected 4 ancestor silks and 1 furrier's trap, meaning the latter counts as a "cloth-producing plant". Perhaps it's best not to think too much about what that would look like

Even if you don't have a live lead for scrying, I think you can do the green ones over and over. Should count
A quick way to complete it is to kill an NPC at a resource held by an opposing alliance, although killing random NPCs anywhere in Cyrodiil may also give credit for it, this hasn't been confirmed one way or another yet.

For the sake of safety if you are afraid of being ganked, you can also check around keeps that are well within your friendly territory. They may not have been fully repaired or be in one of those intermittent stages where the walls go to 75% health (I don't PvP often so I don't know the right term for this, but you'll know it when you see it).
