So after completing the quests that took me into the crater of Ash Mountain I was kind of disappointed that I didn't get to see Dagoth-Ur or the Heart Of Lrokan or anything that's supposed to be there.

Wrong volcano. Ash Mountain is in the Stonefalls region on the mainland, while The Elder Scrolls III: Morrowind takes place on the island to the north, Vvardenfell. The volcano you are thinking about is Red Mountain.

No, Ash Mountain explodes when the Heart of Lorkan is destroyed doesn't it, so it's the right volcano.
But they are not going to show you the Heart of Lorkan during wartime, you are a stranger, and the Tribunal will sense you have no soul.

This game takes place before Morrowind, which takes place before the mountain explodes which happens before Skyrim.
I realise this takes place before morrowind, I just got my Volcano's mixed up.
