Small groups should be able to take on larger groups with skilful tactics, but I have seen some oil pot spam that while is fun in a childish way, is more akin to abusing a broken game mechanic than a display of skill.

5 or 6 players can take a zerg in a tower when that zerg is a bunch of brainless people charging in a tower. Sorry but if a well organized group can put proper traps/sieges in place, plan their attack, while the other group yells "LEROY!!!!" and runs in, then the 'Leroy' group should get their asses handed to them.
For example we were holding upstairs against a large zerg (maybe around 20 of us vs maybe 70+ of them). A small group of them rushed in (I'm going to guess the 'randoms') and they died while the larger group waited (for us to use oils) then they charged up and decimated us.
Just a small example, but there are tons of ways around oil pots that are fair. We once had tons of oil pots at a postern door that they couldn't break, so what did they do? sieged at both ends. Took them a few mins to break the other door down but then we were, for lack of a better term, screwed.
There are so many examples, but it all comes down to: Who has the better plan/strategy/idea. This is war. You scout, you plan, you coordinate, and you strike. I'm strongly against the idea of nerfing anything 'counter zerg' because that will be boring and be a numbers game.
If you want to be able to charge into the enemy like a brainless grunt then I don't know what to tell you because that's boring.

What you describe about 20 people taking on a larger group in a keep seems completely normal- that is not cheese.
However, there are structures in the game that you cannot siege from both ends- for example you can just sit in camp towers and bridge towers with oil pots out and stand in your own oil with oil also coming from above creating a constant sea of death that no one can enter without dying.
This would not be an issue if either there was friendly fire for oil or if oil had to be poured from a high point to a low point. Oil could still be used as a powerful defensive weapon but without the cheese element.
