Seems running in windowed keeps the temp down in most games. I'm not really sure why, probably not as much gpu/ram dedicated to the game? I noticed an increase in my core temp as well but not anything near 10 degrees(mine went up like 2-3). I don't know what kind of cooling you have set up in your pc but as vid cards are made to run at high temps it can still hurt the performance/longevity of the card. If I where you I would get some improved cooling instead of settling for playing in windowed.....
duster...blow that thing out.
of if you have a compressor, just remember to unscrew the drain at the bottom first (don't want any moisture to spray out of the nozzle).
@Arwyn Does switching from "true" full screen to the Windowed full screen change FPS at all?

The FPS in the true full screen is higher by about 5-10fps, the windowed full screen is as it was before the patch. (40-60 fps depending on where I am)
My machine is clean and as I said I dont get many (if any) high temp issues on most other things I play, 65-70c is well under the 560/ti's operating temp but the jump to 75c concerned me a little, at least now I know why.

Have you been monitoring your ambient, and CPU temps? do you know the temp of the room where the PC sits?
many variables at play here, 10c is a significant temp increase...has to be some outside factor at play here.

Apply some new paste to your cards and cpu and that helps a ton with the cooling
Besides that, make sure to lubricate your fans to once in a while and make sure to "dust of" your towers.
changing cooler fans is also adviced about every 6 months.
Hope these tips will help you guys out
Now game on !!!
I experienced quite the same as temperatures (just lower than yours) and also other issues, so atm I stick to windowed full screen.
In fullscreen I had once a blue screen and I had some graphic issues while playing and especially closing/quitting the game.
As GPU I have a Sapphire R9 270X Toxic (Catalyst V13.12c).
I tested this also with the beta Catalyst 14.3:
no problems in fullscreen neither in windowed fullscreen (no issues closing game neither while playing it). The only problem with the beta drivers is the temperature that is higher than with the latest release.
After reading this thread, I decided to clean out the dust inside my tower. Dropped by CPU temps from 80C to 65C. Good times!

LOL, my Intel Pentium 4 D still running strong with the same thermal paste it was applied back in 2003. Thermal paste evaporating or "fading away"? Please share whatever you're smoking. Must be some good stuff.
