I've done at least 30 of these dynamic encounters and still no gem drop. I think I'm going to stop doing these things until the drop rate is improved as I have little time to stand around and wait and wait.

How hard can it be to put in some kind of override so you don't have to do the same content 100 times?
Personally, I have stopped worrying about it. I just won't do content that works like this. Eventually there'll be nothing left to do and I'll be another player, here since the start, gone from the game.

I agree, but the dynamic encounters are permanent. I suspect you meant the Night Market, though.Not sure I like these dynamic encounters.. For a game that was supposed to be a lot less FOMO, it seems to go in the opposite direction:
* Do these things before the end of the week.
* Get an EXTREMELY rare item, doing this rare event that you have to wait for 30 to begin, and if you miss it, you'll have to wait another 30 minuttes. (OH and theres 3 of them at the same time)
* get this within the next 2 months, or it goes away..
* Oh and there's a few events popping in..
* remember there's new content coming in a few weeks..

I've been at the Stonefalls encounter with a timer on (doing chores between) for days, 10 hours a day. No gem.
But I've gotten 3 recipes. A friend got the gem on the first or second day, no recipe. The RNG in this game is so messed up./Raises hand. Very wrong, deep in the maths. Maybe in the RNG software itself. And there is no doubt that some people have much, much better RNG than others. I know someone who got a rare painting at least every 5th run through vLC. My stickerbook is full from vLC, and I got 1 painting.
(ETA:) I know there are always outliers in RNG. Which is why I've been asking for weighted RNG for years. But this is beyond outliers.

No way to predict /track Dynamic Encounters that I have found. I have heard folks say there is a 30-minute timer per encounter instance.

Yes some point there should be a "mercy drop" where the drop rate is 100% to put you out of your misery.
