The Parch one is probably the easiest. There are several around the zone (the closest is if you hug the right wall as you go in and just walk along the wall), and it's a door with a skill and crossbones on it. Inside, you just need to avoid the lightning and fire, and you really can take all the time in the world for it. You will either need to duck under or jump the bolts to pass (unless it's bugged and doesn't spawn the low ones, in which case just sneak through the whole thing and it's really ezmode), so the best thing to do is to point your camera so you see your character from the side and just get through.
The Skittering one is also pretty easy. The brazier right in front of the door is where it starts, and you synergy on that to get a fireball, then you'll see three coccoons highlighted that you need to burn. The center one is closest and I usually grab that one first. After you burn one, you run back to the brazier at the beginning to pick up the fire again. I usually take the right one second - you can go along the path to that center coccoon to avoid the enemies and then hug the wall to pass a pack of mobs, then run out in the open to the next one and avoid all mobs. Burn it and go back the same way to get the third fire. That one is pretty straightforward to get to, but the mobs are really close to that one, however if you curve around the front group to get to it, you can synergy it before it aggroes and finish the race.
The Sorrow's race is the worst since you have to go the farthest, you can't avoid the mobs, and the buff reward is actually obnoxious to deal with. It starts at the void portal in front of you, and you just need to synergy on five portals around the area. Start in front to get that one, then the second is on your left. You'll likely aggro a mob pack there, so just dodge roll and book it back toward the center, but going in the direction of the center of the map to hit the third. You'll probably grab another pack of adds on the way. The fourth is straight across the jump pad and then along the side of the hill, and then the fifth is way on the other side of the boss arena from the fourth in the middle of another add pack. Honestly I'd do this exactly once for the achieve, and then never again.
"Race" is a misnomer. It's timed, but it's not like you don't have a bunch of time to do it in.
Parch is indoors, and once you know the sequence of jump, crouch, and avoid flame circles it is easy enough.
Skittering is outdoors and there are mob packs that can aggro, but their leash is short. Do the middle nest first, then the left, then the right. Slot Resolving Vigor and run like the wind. Note: You have to return to the brazier after burning each nest (except the last).
Sorrow's is the trickiest. Multiple mob packs, plus you can't see the 4th void until you round a corner. Take the void by the door, head down the left branch, void right in front of you. Don't go too far or you will aggro the mob pack. Turn 90 degress right and you'll see the 3rd void, stay left then move right and you can avoid aggro. Turn 90 degrees again and head that direction, once you round the corner you'll see the 4th, stick right and you'll avoid the packs. Turn 90 degrees left and you'll see the 5th across the boss area. If the boss isn't there, plot a course through the middle of the mob packs. You'll likely aggro the pack by the 5th void but by then it doesn't matter.
Edit: Typos

Note that the Parch races were bugged and were much easier before the last maintenance fixed them.

It's not all of them, just the one that's closest to the Plaza. The others in the Parch are crouch/jump/dodge and sometimes downright frustrating.
