I'm actually relieved that we have multiple Companions of the same Race or Class this early on. That lets us know that they're not "one and done" and that they might be used on a different character in a different context.

But in terms of someone I'd want to travel with, I'd actually prefer a Nord or Bosmer Warden Werewolf. It's a little stereotypical, but I want a werewolf character who fully embraces the hunt. Combat-wise, they'd have similar nature and animal themes between their Warden and Werewolf toolkits, so it would thematically work well.
I definitely think that when we get a new Class, there should be a Companion solely dedicated to that Class (similar to Azandar al-Cybiades) which shouldn't be a Werewolf or Vampire. Instead, I'd like to see a bundle of two Companions, one of which is a Werewolf and the other a Vampire, sold in the Crown Store, like the bundle with Zerith-var and Tanlorin.

Exactly what I was thinking. Of course outliers can make for interesting stories, but if it's almost all of them, it becomes a formula of its own.
But the TES lore isnt boring. It doesn't need constant subverting. The races and their lore are unique and flavourful and all have their fans for what they typically represent, and when announcing a companion of a race, it'd be nice if the fans of that race could usually be excited for an experience that falls somewhere within that framework.
Personally, I'd like an older arrogant Dunmer or Altmer mage, a little shady; not quirky, not modern, no constant "Look, don't you love this character? Aren't they cool and fun?" but in the old style of the setting. Someone to befriend all the same, but without personal melodrama, and a little more restrained in personality. Less meta jokes, more wisdom from the character themselves.
And of course I've got to second the love for Zerith-var. I'll always happily adventure with someone written with such depth and such care for lore, prose and humanity.

I'd rather we get well-written characters first, before getting all the boxes checked off. That means before we get a Companion solely meant to represent Bosmer, Nords, Orcs, Vampires, Werewolves, and whatever the 8th Class will be, we should be getting characters who are written well and stand the test of time.
For instance, people weren't happy when we got Ember. She is not representative of Khajiiti culture in the way we would've expected. Instead of making Ember be a Khajiit to check off that box, we should've waited to get someone like Zerith-var, who is also a Khajiit but offers more insight into Khajiiti culture from a different era.
That is to say that I would be disappointed if our next few Companions were just made to check multiple boxes off, rather than being characters we would want to travel with. We don't need our first Bosmer to also be the first Companion of the 8th Class and also be a Werewolf/Vampire — there would be too much going on there, and we wouldn't know when we'd get another Companion who does those individual aspects properly.

I thought a companion being well written shouldn't be needed to be said? That's what all characters should be no matter what they are. My comment is even based on common issues that makes them badly written characters. I don't want a bosmer to be some 8th class, definitely don't want them to be a werewolf, I just want a well written bosmer who is culturally a bosmer.

What Class would you want a "traditional" Bosmer to be? Assuming the 8th Class isn't somehow more thematically relevant to Bosmer. Every Companion has a Class.

Ember is supposed to be really young and just a mage's apprentice. Mirri has already done a bit of adventuring, but still is in her early 20s at most. Isobel is also still a young knight. Tanlorin? Also young. Bastian and Sharp are also still more on the younger side. Actually the only old characters we have are Azandar and Zerith-var. Interesting, by the way, how female characters are basically all young, and the only old characters are male.
